History of wine
Maceration, alcoholic fermentation in stainless steel tanks at a controlled temperature of +24°C – + 28°C. Short exposure in stainless steel tanks. Then the wine is placed in a vacuum under a pressure of 0.9 bar and heated to +30°C to release alcohol. The most volatile aromatics, which are also released from the wine, are specially captured and returned to the wine at the end of the process to preserve its maximum possible varietal authenticity.
The company Einig-Zenzen GmbH & Co.was founded in the town of Falvig on the banks of the Moselle river in 1939 by Jacob Einig and his son-in-law Peter Joseph Zenzen, whose ancestors were engaged in the production of high-quality Rhenish and Moselle wine from the XVII century. It is known that the first written mention of the wine-makers of Censen dates back to 1636. During its existence, the company has gone a long way of development and reached the international level.
