History of wine
Vineyard: Alt Penedès, many small private plots on the slopes along the Bitlles River (Coster del riu Bitlles). Soils are loam with a high content of limestone. Productivity 44 hl / ha (against the permitted 80 hl / ha). Vinification: 9% of the wine is aged in old oak barrels. Exposure: 61 months on lees. Only cork is used for aging. Manual remuage and freezing without freezing. Zero dose.
About producer
The history of the cava at Recaredo began in 1924, when Josep Mata, the son of a craftsman and one of the best degorgists in Catalonia, realized that the production of outstanding wine is also a kind of craft, only much higher. An individual approach to each bottle of cava has been preserved in Recaredo right up to the present day. The grapes are harvested only by hand, the vineyards are processed exclusively by organic methods, and for more than a decade the Recaredo house has been committed to biodynamics, and since 2009 has been certified by Demeter, which unites biodynamic producers from around the world. As a result, grapes, which are produced by vines for the most part over 60 years of age, give rise to wine that has amazing purity, excellent balance and huge potential, which is realized in the process of secondary fermentation and aging on the lees.
